No condensed soup needed!<\/strong><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-32852 size-full\" src=\"https:\/\/awesomejelly.com\/wp-content\/uploads\/2016\/11\/tacosoup1.jpg\" alt=\"tacosoup1\" width=\"594\" height=\"399\" srcset=\"https:\/\/awesomejelly.com\/wp-content\/uploads\/2016\/11\/tacosoup1.jpg 594w, https:\/\/awesomejelly.com\/wp-content\/uploads\/2016\/11\/tacosoup1-300x202.jpg 300w\" sizes=\"(max-width: 594px) 100vw, 594px\" \/><\/p>\n<h1>Ingredients<\/h1>\n<div class=\"recipe-meta\">\n<p class=\"recipe-yield\"><strong>SERVES 4-6<\/strong><\/p>\n<\/div>\n<ul>\n<li>1lb lean ground beef<\/li>\n<li>2 Tablespoons butter<\/li>\n<li>2 Tablespoons gluten-free or all-purpose flour (I like Bob&#8217;s Red Mill White Rice Flour\u00a0)<\/li>\n<li>2-1\/2 cups milk, divided<\/li>\n<li>salt &amp; pepper<\/li>\n<li>1 cup freshly shredded cheddar cheese, plus more for topping<\/li>\n<li>1 package taco seasoning<\/li>\n<li>10oz can Rotel, undrained<\/li>\n<li>15oz can black beans, drained &amp; rinsed<\/li>\n<li>Crushed tortilla chips<\/li>\n<\/ul>\n<h1>Directions<\/h1>\n<ol>\n<li>Brown ground beef in a large soup pot over medium-high heat, seasoning with salt and pepper, until no longer pink. Drain and return to pot.<\/li>\n<li>Meanwhile, melt butter in a small saucepan over medium heat then whisk in flour and cook for one minute. Slowly whisk in 1 cup milk, season with salt and pepper, then switch to a wooden spoon and stir mixture until thickened, about 3-4 minutes. Remove from heat then stir in shredded cheese until smooth. Set aside.<\/li>\n<li>Add taco seasoning, rotel, black beans, cheese sauce, and remaining 1-1\/2 cups milk into cooked ground beef then stir well to combine. Bring to a heavy simmer then turn heat down to medium and simmer for 10 minutes, stirring occasionally.
