These little things are so freaking tasty! You will want to try these Southwestern Taco Cups at your next party- they’re guaranteed to be a hit!
What You’ll Need:
- 1 tbsp. olive oil
- 1 cup red onion, chopped
- 1 cup red bell pepper, chopped
- 1 cup green bell pepper, chopped
- 1 tsp. salt
- 2 cups corn
- 1 cup black beans
- 3-4 garlic cloves
- 1 lb. shredded chicken, seasoned
- Wonton wrappers
- Cheddar cheese
What You’ll Do:
First, heat a pan on the stove. Add in 1 tablespoon of olive oil, then pour in 1 cup of chopped red onions, 1 cup of chopped red bell peppers, and 1 cup of green bell peppers. Add 1 teaspoon of salt on top, and then stir everything well.
Next, add in 2 cups of corn and 1 cup of black beans, and stir them in. Add your garlic cloves and stir again. Then, pour 1 pound of seasoned shredded chicken into the pan and stir it into the mixture. Pour your mixture into a separate bowl and set aside.
Spray a cupcake pan with cooking spray. Add 2 wonton wrappers to each cupcake holder, flattening them against the edges of the pan. Then spoon 2 tablespoons of your mixture into each cupcake holder. Add some cheddar cheese on top of each of your taco cups, and then bake them in the oven at 375 degrees Fahrenheit (190 degrees Celsius) for 12 minutes.
Remove the taco cups from the oven and they’re ready to serve! You’ll enjoy every deliciously crunchy bite!
