Guinness has been brewing pints of its famous stout in Dublin since the mid 18th century. It is a traditional Irish tout beer made from barley, hops, water, and a specific strain of ale yeast. This yeast has been used for over 125 years known as the so-called “Guinness yeast.” The deep color and caramelized flavor that are characteristic of Guinness come from the barley that has been roasted but not malted. Moreover, the dense and creamy head of the dark ale is achieved by mixing the beer with nitrogen to create smaller bubbles that result in a thicker head. Apparently, this beer variety contains isinglass, an ingredient derived from fish. The problem is that isinglass is a form of collagen obtained from the dried swim bladders of fish.
