Who doesn’t love an egg roll? Even if Asian fare isn’t your favorite, that doesn’t mean you can’t enjoy these tasty treats. Our own take on these crispy, crunchy pieces of heaven bring a surprising new spin to the old favorite.

What You’ll Need:

  • 1 ripe avocado, sliced
  • 1 tablespoon flour
  • 1 tablespoon water
  • 1 package egg roll wrappers
  • Slices of pepper jack cheese
  • Slices of bacon
  • Cooking oil to fill saute pan about 1” high
  • Sour cream, for dipping

How To Make

So the beauty of these babies is you can make as few or as many as you please. Whatever the occasion, you can make them in a matter of minutes, and impress your friends with a delicious and simple treat that will have them wondering why they ever bothered to order take out.

The first you’ll want to do is cook your slices of bacon and set them aside. Then, in a separate bowl, mix together your flour and water to make a glue-like paste, which will ensure that all your yummy fillings stay inside your egg rolls, rather than all over the pan.

Set your egg roll wrapper flat out on the counter, and place slices of pepper jack cheese into the center. If you are a cheese-lover, feel free to pile it on here. Prefer the taste of the creamy avocado? Leave some room! After the cheese, place a couple of slices of avocado on top, followed by slices of bacon and more avocado.

Carefully take the corners of your wrapper and fold in the top and sides and roll, like you would a burrito. Before cooking, remember to use that paste you made to seal the edges of your wrapper in place.

Minding the hot oil, place your egg rolls in the pan and watch as they immediately brown and get that delectably delicious crunchy texture. Using tongs to turn them so that they brown evenly, and then remove them to cool for a minute or two on a paper towel, which will soak up any excess oil.

Plate the egg rolls with a side of sour cream for dipping, or eat them plain and enjoy the combination of creamy avocado, spicy cheese, smoky bacon and crunchy outer shell.
