Don’t Waste The Crawfish Head

If you’re visiting Houston during the first half of the year, then you might just get to enjoy a Houstonian favorite: the crawfish. Crawfish season can fall between the months of January and July along the coast, depending on the weather. Whether you get to sample these critters in some of the city’s restaurants or get invited to someone’s backyard for a traditional “crawfish boil,” don’t waste the crawfish by discarding the head! This is a big no-no as every local knows that you should suck the head for in it resides the collection of the spices and as such, is the most flavorful part. However, don’t get too excited and make the mistake of inhaling deeply and get overwhelmed with the spices. To get the full experience, one must suck slowly, giving the head a little pinch to control the juices.
