Some of Mexico’s dishes remind us of delicacies from other countries, and the Enchilada is one of them.
Enchiladas, which are rolled or folded corn tortillas which are stuffed with traditional Mexican fillings such as chicken, beef barbacoa, and veggies among others. They somewhat resemble the Italian “Cannellonis” in the way they are made, but trust us, these babies are definitely a thing of their own.
The stuffed corn tortillas are covered in a healthy pouring of red or green sauce made out of chilies, and then baked to allow all that rich, tomato-based goodness to bubble and seep through the delicious rolls. Once done, the piping-hot dish is topped with cream, cheese and onions, which lend another dimension to the delicacy.
