The flavorful, corn-husked wrapped delicacy known as the Tamale is yet another of Mexico’s culinary wonder. But did you know that besides giving your taste buds something to celebrate, the tamale was created to serve a more utilitarian purpose, especially for the Aztecs, Mayans and Incas?
Way before there were military MREs (meals ready-to-eat), ancient warriors belonging to the Mexico’s ancient tribes fought wars with tamales literally on their sides. The pockets of steamed masa (ground corn dough) were made to allow these brave men to bring nourishing food to the battlefield. We don’t know how many or which wars were won or lost because one side had better versions, but we do know that because of their ingenuity, the tamales have survived generations, permitting us to savor them to this very day.
Tamales are traditionally made by filling banana leaf or corn husk pouches with ground maize. Different kinds can be made using meats, cheeses, fruits, vegetables, chilies and mole, all of which are just as delicious as the other. The filled pouches are then steamed until the corn dough is cooked through, all you need to do now is peel-off the wrapping (do not forget!!!) and take a bite out of the simple yet wonderful delicacy.
