Tejuino is yet another of Mexico’s beverages that uses corn as its main ingredient.
The cold and refreshing drink is created using masa, which is the same dough used in making tortillas and tamales. This corn mash is mixed with water and piloncillo (unrefined cane sugar) and is then boiled until it reaches a thicker consistency. The resulting slurry is allowed to cool and ferment slightly, after which it is ready to be served.
Tejuino, which traces its origin to Jalisco, is traditionally served cold, with a squeeze of lime juice, a pinch of salt and a scoop of shaved ice or lime-flavored sorbet. It is very popular in the country and is even gaining a following in Mexican American communities in the US.
