Tortillas that have been deep-fried to a lovely crisp are called tostadas, which mean “toasted” in Spanish. These transformed tortillas are not only simple to make but are also versatile, with very interesting and creative uses for them. They can be served alone with a side of salsa, mole or guac, or used as a base to make a towering salad made of different garnishes such as shredded vegetables, refried beans or frijoles, cooked meat, seafood, and cheese.
One of our favorites include tostadas served with a ceviche, which is a separate dish made out of chunks of raw, fresh fish, marinated in lime juice and a mixture of sliced onions and chilies and flavored with a dash of salt and pepper. The crunchy texture of the tostada definitely complements the soft, slightly chewy texture of the raw fish, which in this case, is tuna.
