Gorditas, which in English translates to “little fat one” is another Mexican delicacy that uses corn as its base. Mexico’s affinity with corn, which stretches back hundreds of years in its past, is the reason why most of the dishes in the country make use of the valuable crop.
Similar to a tlacoya in the sense that it’s thicker that your traditional tortilla, gorditas differ from the former in the way that it’s cooked. Gorditas are fired-up on a griddle, similar to how pancakes are made, except that the dough, or masa, is on the dryer side as opposed to the wet batter of a pancake. In contrast, tlacoyas are deep fried, giving the two they’re own distinct textures.
