Waiters and chefs go through rigorous training in order for them to perfect their craft. This means that not only are they experts, but they’re also juggling several things at once during work hours. So the moment you enter a restaurant or a brasserie, sit down quietly on your seat of choice and wait to be served. Someone will come to you. But if you can’t stay too long, wait to make eye contact and slightly raise your hand up as if to gently remind them of your presence. Waving wildly is considered rude behavior and might get you reprimanded.
