Once considered unhealthy for being high in cholesterol, eggs are now accepted as safe and healthy. Recent studies have shown that the cholesterol found in food has much less of an effect on our blood cholesterol than the amount of saturated fat we feast on. Of course, moderation is again the way to go. If you eat a dozen eggs a day, don’t expect your healthy benefits to increase. The American Heart Association maintains that we only need about 300 milligrams of cholesterol a day, and one egg offers about 60% of this mark. Eggs are an excellent source of protein, and the yolks contain some vitamin D. They are also a rich source of vitamins B6, B12, and minerals such as iron, copper, and zinc. Note also that duck eggs have more fat than chicken eggs, even though they also have more protein. So, don’t worry about having a couple of eggs for breakfast. Best to pair it with some fruits as well.
