In case you’ve never heard of Casu Marzu cheese, be prepared to be totally grossed out. Of course connoisseurs won’t agree with you. This Italian cheese, also known as maggot cheese, is made by allowing heated sheep’s milk to curdle for up to three weeks, after which the top is cut open, drawing flies to it in order to lay their eggs in the cheese. When these eggs hatch, maggots come out and eat the rotting milk. And when that happens, they excrete a substance that gives the cheese it’s rich flavor and soft texture. Because of the process and the fact that people are eating rotten and maggot-infested cheese, it has been banned not only in the U.S., but even in Italy where it’s from, being sold on the black market for those that still want a taste.
